Pita and Veggie Burger


Throw vegetables in a food processor or blender: Portobello mushrooms, carrots, red peppers, onions, garlic, cilantro, kale, etc. Add a can of rinsed and drained black beans, soy sauce, cumin, salt, pepper, chives. Blend everything together. Mix in a lot of bread crumbs and one egg. Form patties and pan fry in oil until crunchy on the outside.

I like adding Greek elements to my pita burgers, like the Feta cheese I used in this dish. A non-veg version might be your standard beef burger but add some oregano, parsley, mint and garlic to the ground beef. If you want to be really daring, use ground lamb instead of beef. Either way, after the patty is cooked, put Feta cheese on it, along with chopped tomato, onion, cucumber and maybe even some Tzaziki sauce (Fage, maker of those delicious Greek strained yogurts, has a good one, http://www.fageusa.com/tzatziki_info.html).
